Greens & Eggs: A Sunday Curry, Island Style

So my amazing mother got me two new spices, as I am finally moving at the end of this week. I decided to try one of them out tonight, and made this delicious dinner! I got the recipe with the spice jar (such a good idea for a spice shop to do!), and it can be found here:, along with many other recipes. (I will definitely be cooking my way through their site shortly!)

Now, without the “secret ingredient”, this recipe may not be feasible for many of you, but I will do what I can to provide an alternative. The recipe below is my variation, but it’s fairly close to the original. Enjoy!

Greens & Eggs: A Sunday Curry, Island Style
Prep time: 10 minutes
Cook time: 35-40 minutes
Yields: 4 servings

2 large onions, chopped into small pieces
2 tbsp minced ginger
10 cloves garlic (almost a whole head of garlic)
1 red bell pepper, chopped
2-5 tsp Tobago Habanero Curry (the secret ingredient; I recommend starting with fewer tsp and adding more later, as this stuff is spicy!)
1 tbsp tumeric
1/2 cup water
1 large potato, peeled and cut into 1/4″ cubes
1 small zucchini, sliced
Large bunch of greens (kale, spinach, chard, etc), coarsely chopped
1 can coconut milk
Salt to taste
8 eggs, hard boiled (2 per person)

Saute onions, ginger, garic, and red pepper in oil over medium heat until soft; add tumeric and Tobago Habanero Curry powder. When it starts to stick together, add water, coconut milk, and potatoes; simmer over low heat for 10-15 minutes until potatoes are almost cooked through. Add zucchini, cook until soft. Add greens, continue to simmer for 5-10 minutes. (Add more curry powder at this step if it’s not spicy enough for you.)

Cut the eggs into slices or halves, arrange on bed of rice (they recommend saffron rice); ladle curry mixture over top, and serve.
