Banana Bread

This is the best banana bread I’ve ever had, and ever made. The secret is the bananas – I use 6 or 7 medium-sized bananas at least. I hope this recipe becomes a staple in your kitchen the way it has in mine. Enjoy!

Banana Bread
Oven temperature: 350F
Bake time: 60 minutes full loaf, 30 minutes mini loaves

1 1/2 cups white sugar
3 eggs
3/4 cup oil
2 cups flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp all-spice
2 cups mashed bananas (approx. 6-7 medium bananas)
1/2 cup raisins (optional)

Pre-heat oven to 350F; grease pan.

Beat sugar and eggs until creamy with electric mixer. Add oil, blend well.

Sift together: flour, baking soda, salt, cinnamon, all-spice. Add to creamed mixture slowly. Mix in bananas and raisins.

Fill loaf tin approx. 2/3 full. Bake for 60 minutes, 30 minutes for mini loaves. Test with toothpick.

Trick for the bananas: peel and freeze bananas in a bag until needed.
