Slow Cooker Pot Roast

This recipe comes from my friend Janelle, who bought a new slow cooker this past weekend and just couldn’t wait to use it. She said her pot roast was amazing, and I’m planning on making it for dinner within the week. Enjoy!

Slow Cooker Pot Roast
Prep time: 15 mintues
Cook time: 10 hours on low
Yields 10-12 servings

3lb roast (she used bottom blade roast)
4-6 large potatoes
2 cups baby carrots (chopped or whole)
3 celery stalks, whole
1 large onion, chopped
2 garlic cloves, minced
500ml no-salt beef broth
2 tbsp Oven Roast Seasoning*
1 bay leaf

Rub roast on all sides with Oven Roast Seasoning.

Lay celery stalks at bottom of slow cooker; add onion and garlic. Place meat on top, and arrange potatoes and carrots around. Pour beef broth over everything, and add bay leaf to liquid. Turn on low for 10 hours. Serve warm.

Optional: use cornstarch to thicken gravy when cook time has finished.

*NOTE ABOUT OVEN ROAST SEASONING: This is a pre-made spice blend from Epicure, found <a href=”“>here</a>. It is a blend of paprika, coriander, pepper, onion powder, garlic powder and thyme.
