Breakfast Muffins

Breakfast Muffins
Bake temp: 400F (200C)
Bake time: 15-20 minutes
Yields: 12 muffins, or 8 mini loaves 

1 cup packed brown sugar
1/2 cup vegetable or canola oil
1 cup buttermilk or rice milk
1 egg
2 tbsp molasses
2/3 cup flour
1 1/2 cup natural bran*
1/2 cup wheat germ*
1/4 cup flax seeds*
1/4 cup sesame seeds
1 tsp baking soda
1/2 tsp cinnamon
1 cup raisins

Blend brown sugar, oil, milk, egg, and molasses together. Sift dry ingredients together, add slowly to wet mixture. Mix until well blended. Stir in raisins. Pour into muffin tin (or mini loaf tin) about 2/3 full, bake at 400F for 15-20 minutes, until toothpick comes out dry.

*These ingredients can usually be found either in the baking aisle of most grocery stores, or in the organic food section.
