Cashew Chocolate Lava Cakes

A delicious dessert recipe courtesy of Janelle. So excited to try these out!

Chocolate Lava Cake with Cashews
Bake time: 10-12 minutes
Bake temp: 400 F 

¼ cup cashews (or hazelnuts…or almonds, whatever you like!) – optional
½ cup butter
3 eggs
½ cup sugar
6 oz (170g) 70% dark chocolate
¼ cup all purpose flour
Splash of vanilla extract
6 small ramekins
Extra butter to coat ramekins
Whipped cream, raspberry sauce, caramel sauce, vanilla ice cream- whatever you like to add on top/on the side

Preheat oven to 400 F. Generously smear ramekins with butter, and stick crushed nuts to the insides (all sides), set on baking sheet. Beat eggs and sugar about 6 minutes, until white and doubled in size. Meanwhile, melt chocolate and butter in a double boiler. Add chocolate mixture to egg mixture, add splash of vanilla. Add flour and stir everything together for about 1 minute- do not over mix but make sure it’s well combined. Fill ramekins ¾ full and bake for 10-12 minutes. DO NOT OVERBAKE or you won’t have “LAVA”

Tip ramekin upside down on the plate to serve, and add all the yummy extras you want! MMMM!
