Chicken in Cheese & Jalapeno Sauce

So a couple of nights ago my boyfriend said he was going to go workout and would therefore not be home for dinner. Immediately, I decided I was having this for dinner. Cheesy goodness, spicy jalapenos, and crunchy nacho chips – so good. Enjoy!

Chicken in Cheese & Jalapeno Sauce
Prep: 10 minutes
Cook: 45 minutes
Yields: 2-4 servings

1 chopped bell pepper
2 jalapeno peppers, chopped and seeded
2 garlic cloves, minced
2-4 breasts of chicken
2 tbsp margarine
2 tbsp flour
1 1/2 cups milk (the more the fat, the easier the cheese will blend)
1 cup shredded sharp cheddar cheese
hot sauce, to taste

Serve with rice & nacho chips

Toss bell pepper, jalapeno peppers, garlic, and chicken (chopped or whole, your choice) into a baking pan. Bake at 350 for 20 minutes.

Meanwhile, melt margarine in saucepan. Stir in four. Add milk gradually until well blended. Heat over medium-low, and slowly stir in cheese. Add hot sauce to taste.

Pour sauce over chicken and peppers in oven. Bake for another 25 minutes until chicken is cooked through. Serve with rice and nacho chips.

My recommendation for serving: layer chips, broken into large pieces, then rice, then chicken mixture.
