Cilantro-Lime Rice

This is a delicious alternative to plain white rice. Flavorful yet subtle enough to be served with almost anything! This recipe was originally given to me by a coworker and is taken from a long list of recipes that make up the Cafe Rio Sweet Pork Salad.

Cilantro-Lime Rice
Prep time: 5 min
Cook time: 20 min
Yields: 2 servings

1 cup uncooked rice
1 cup chicken or vegetable broth
1 cup water
2 cloves garlic, minced
1 tbsp lime juice
3 tbsp freshy chopped cilantro

Combine rice, broth, water and garlic in a rice cooker (or small pot, if you are talented enough to cook rice on the stove). Cook for 20 minutes, or until done.

Stir in lime juice and cilantro, and serve.
