Summer Strawberry Salad

This is a modified version of a salad “recipe” found in the local newspaper by a coworker. I was lazy and missing some ingredients, so I took the basic flavor idea and made it my own. This makes a lovely addition to any BBQ’ed dinner, summer-style. Or it can be enjoyed solo. Hope you like it as much as my guests did!

Summer Strawberry Salad
Prep time: 10 min
Serves: as many or as few as you need

Salad base:
Salad greens- I recommend spinach, or mixed greens, but anything would work
Fresh strawberries, sliced
Cucumber, chopped
Bell pepper, chopped
Pine nuts – or any other nut such as almonds or pecans
Feta or crumbled goat cheese

Dressing (for 6-8):
Strawberry jam, approx. 1/4 cup
Balsamic vinaigrette, approx. 3-5 tbsp (to taste)
Black pepper to taste

Toss salad ingredients in bowl. Warm jam in microwave for 30 seconds. Stir in balsamic vinaigrette to taste, as well as black pepper to taste. Toss salad with dressing immediately before serving.

Goes well with steak, grilled chicken, etc.

The original calls for cooked pork to make this salad a meal. I preferred it as a side since we already had steaks on the barbecue.

You could easily substitute almost any summer fruit in place of strawberries and/or strawberry jam. Have fun with the flavors!
