I was feeling some Chinese cuisine this week, and I gotta say, great decision. The ginger green onion pesto really made this dish, so be sure to add that in. Enjoy!
Rock-Salt Pan-Roasted Chicken in Garlic Sesame Oil
Prep time: 10 minutes
Cook time: 45 minutes
Yields 2 servings
2 tbsp olive oil
1 onion, finely chopped
4-6 cloves garlic, minced
2 chicken breasts, cut into bite-sized pieces
1 tbsp coarse salt, such as sea salt or rock salt
1 tsp sesame oil
Fresh black pepper to taste
Ginger green onion pesto
Preheat oven to 375F. In over-proof skillet, heat oil over medium heat. Sauté onion and garlic for approximately 2 minutes until fragrant. (If you don’t have an oven-proof skillet, sauté in normal skillet and transfer to oven-safe dish.)
Arrange chicken pieces on top of onion and garlic, sprinkle with coarse salt and drizzle with sesame oil. Bake in oven for 30-45 minutes until chicken is cooked through. Allow to rest 2-3 minutes.
Serve on rice, with ginger green onion pesto, and steamed vegetables on side.
