Apple Crisp

Iain’s favorite dessert is apple crisp, because once you take away the ice cream, it’s dairy-free. And delicious. Usually when we go out, I get the ice cream in a bowl on the side, and he has the rest. The other night I decided to get some nice steaks from the butcher to do a nice dinner. And of course, with a nice dinner you have to have a nice dessert. I even got So Good vanilla ice cream for Iain. I have tried a few recipes for apple crisp and this is definitely my favorite. Enjoy!

Apple Crisp
Prep time: 15 minutes
Cook time: 30 minutes
Bake temp: 350F
Serves 2 generously

2-3 apples, peeled, cored, and chopped- I like honey crisp or pink ladies
2 tbsp white sugar
1/2 tsp flour
Generous pinch cinnamon

2 tbsp quick-cooking oats
2 tbsp flour
2 tbsp brown sugar
Pinch baking powder
Pinch baking soda
1 tbsp (heaping) butter

Vanilla ice cream

Toss apples with sugar, flour, cinnamon, and place in oven-safe dish.

Combine oats, flour, brown sugar, baking powder, baking soda; cut butter in with knife or use hands to mix until crumbly. Sprinkle over apples.

Bake for 30 minutes at 350F, until apples are soft. Top with scoop of ice cream and server warm.
