Chinese Lettuce Wraps

I’ve had lettuce wraps once before at a restaurant, and have heard a few different friends comment on how delicious they are. I was under the impression that these would be difficult to make and was pleasantly surprised to find out just how easy they were, and how delicious! I would highly recommend this dish either for a quick dinner on a busy weeknight, or for a fun dinner with friends. If you are feeding people with many different culinary tastes or requirements, you can cook meat/protein, vegetables, and noodles separately; it just takes more time to put each wrap together, but it means you can have more variety! Chinese Lettuce Wraps
Prep time: 10 minutes
Cook time: 10-30 minutes (longer for meat, shorter for vegetarian)
Serves: 4

1 head iceberg lettuce
130g package Chinese chow mein noodles, or rice vermicelli for gluten-free
Vegetable oil for cooking
2 chicken breasts, chopped into bite-sized pieces (or beef, or pork, or tofu, or shrimp)
1 can water chestnuts, finely chopped
1/4 cup peanuts, cashews, or other desired nut
1 red onion, finely chopped
2 bell peppers, finely chopped
1 cup mushrooms, finely chopped (shiitake, white, or brown mushrooms recommended)
2 cloves garlic, minced
2 tbsp low-sodium light soy sauce
1/2 tsp honey
1/4 cup hoisin sauce
1 tbsp chili garlic sauce
2 green onions, finely chopped
1 tsp fresh cilantro, finely chopped

Unwrap lettuce leaves whole, to form cups or wraps. Rinse, pat dry, and set aside.

Heat oil in large frying pan or wok. Starting with the firmer vegetables and meat, sauté until everything is cooked through and vegetables are soft. Add garlic, sauté 1-2 minutes. Add soy sauce, honey, hoisin sauce, chilli garlic sauce to pan. Add green onions, sauté 2-3 minutes.

Meanwhile bring water to a boil in a large pot. Drop in noodles, boil until cooked, usually approx 3-5 minutes or according to package directions.

When noodles are done, add to vegetable/meat mixture. If more sauce is needed, add in now and heat through.

Mix cilantro into stir fry mixture, serve immediately. Spoon some stir fry mixture into a lettuce leaf, wrap, and enjoy!

*This dish can be modified to include any meat, seafood, vegetables, etc you like, you can also change up the sauce if you like and use your favourite stir fry sauce. Post your modifications below!
