Strawberry Bites with Cream Cheese Filling

Ashleigh passed this onto me when I needed something easy and sweet for a party Janelle was hosting. The hardest part about this whole thing is coring the strawberries, and getting the filling into a piping bag without making a huge mess – whoops! They turned out AMAZING, despite the mess! Hope you enjoy these as much as we did.

Strawberry Bites with Cream Cheese Filling
Prep time: 20-30 minutes
Serves approx. 20 people*

4lbs strawberries, washed
1 package light cream cheese
1/4 cup icing sugar (to taste)
3 tsp vanilla extract
Graham cracker crumbs, maybe around 1/4 cup

Cut tops from strawberries, hollow out using a paring knife. Mix together cream cheese, icing sugar, and vanilla extract with an electric mixer until smooth. Transfer mixture to piping bag or ziplock with small hole cut into one corner (this is best done by folding the top of the bag down at least twice, and using a spatula to spoon mixture into bag). Pipe cream cheese filling into strawberries, dip top into graham cracker crumbs, plate and serve!

*This of course depends on if your guests can restrain themselves and not eat the whole plate. 😉
