Classic Fluffy Pancakes

For those in my audience not native to Calgary, starting on the first Friday of July the Calgary Stampede opens its gates and turns our city into a 10-day-long party, complete with cowboys, all kinds of deep fried food on sticks, and my favorite: free home-style pancake breakfasts all over the city! In honor of this Calgary tradition, I share with you my favorite fluffy pancake recipe, so that you may all enjoy!

Classic Fluffy Pancakes
Prep time: 5 minutes
Cook time: 10 minutes total
Yields: 4-5 servings

1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1 tbsp white sugar
1 1/4 cup buttermilk
1 egg
3 tbsp melted butter, plus more for greasing pan

Sift dry ingredients together, mix in milk, egg, and melted butter. Heat pan or flat grill, grease, and drop pancake batter by 1/4 cup onto pan. Cook until edges start to form bubbles that do not fill in, and edges start to look dry. Flip, and cook another few minutes, until both side are golden brown. Serve warm with butter and real maple syrup!
